Spinach & Parmesan Chicken Recipe

This recipe is hands down one of my favourite chicken recipes I’ve made this year. While I’d love to bore you with how everyone loved this recipe, I’m just going to cut to the chase - recipe & photo’s provided below!

Ingredients

- 8-10 Boneless chicken thighs 

- Italian seasoning 

- Paprika

- 1 Clove garlic 

- 5oz Baby spinach

- 1.5lbs Baby potatoes

- 500ml Half & half (I use “Blend” by Farmers) 

- 1 Cup Parmesan (shredded) 

- 2 Tbsps Butter 

- 1 Tbsp Extra virgin olive oil 

Directions

Preheat oven to 375. Chop up baby potatoes into 4-6 pieces each, set aside.

Melt 2 tbsps of butter in a pan on medium-high heat. Season chicken with a sprinkle of paprika, Italian seasoning, and salt & pepper (to taste). Place chicken in pan & fry until golden brown. Flip chicken, repeat seasoning and frying instructions. Set aside. 

Put 1 tbsp of extra virgin olive oil in a pan. Add in baby spinach. Put heat on high and cover for 1 minute. Turn down stove top to medium, remove cover and let simmer until withered. Set aside. 

Things are getting saucy..

Pour half & half into a pot on medium-high. Add in 1 cup of Parmesan (fresh) and 1 clove of garlic. Stir until ingredients are mixed & melted. Add in withered spinach, 1 tsp paprika, 1 tbsp Italian seasoning. Add salt & pepper to your liking. Stir & set aside. 

Place chicken & potatoes in a baking dish and pour your spinach sauce overtop (make sure it covers everything as pictured below).

Bake for 45 mins on 375, then increase temperature to 450 for 5 minutes or until the top is golden (potato tops included). Remove from oven. Let cool for 10 minutes & enjoy!
